Experts tell us egg yolks are bad for us.

Some change their diet and consume eggs without the yellow part.

Many people are confused... asking what is the difference between egg beaters and egg whites.

Egg beaters are modified egg whites. They're typically fortified with nutrients such as Vitamin A, Vitamin B-12, Vitamin D, Vitamin E, folic acid and Riboflavin (Vitamin B2). They also contain Xanthum gum (a sugar derivative of corn).

Egg beaters are pasteurized, too.

Egg beaters are much easier to use than real eggs (because there's no shell and the egg whites have been separated from their yolk).

But egg beaters don't work well as an egg substitute in some recipes - they lose their whipping ability.

If you're looking to use egg white substitutes in recipes, 1/4 cup of egg beaters equals one real egg. One real yolk equals 3 tablespoons of egg beaters.

The other benefit of egg beaters is its shelf life... natural egg whites stay fresh for 60 days, while egg beaters have a shelf life of 90 days.
